Today’s meatless monday meal is a creamy dairy free soup you can literally whip up in minutes.
1 large organic apple
3 cups butternut squash -cubed
1 large onion
1 tablespoon coconut oil
grated fresh ginger (use as much as you desire)
salt and pepper to taste
4 cups of organic veggie or chicken stock
Steam butternut squash for 5 minutes to soften (this is optional and helpful if your blender isn’t strong). In the meantime, sauté the onions in coconut oil until translucent.
Mix the apples, onions, butternut squash, ginger and stock into your vitamix or blender (i used my vitamix).
Sprinkle with cayenne, salt and pepper and serve hot.
Options: add some toasted bread, roasted tempeh or pumpkin seeds as toppers
Complete the meal: with a green salad… This soup goes well with arugula or massaged kale..
