I’ve been having some serious pizza cravings lately (blaming the baby bump) but I don’t want to just grab any old slice. Instead I’m gonna rock this semi- homemade pizza makes for a wholesome, nutritious dinner that’s ready in minutes.
1 whole wheat or gluten free pizza dough (you can buy any pre made brand but I like Udi’s Gluten Free)
Toppings:
Marinara sauce or pesto
Grated or fresh organic mozzarella and parmesan
Red onions, sliced thin
Spinach leaves
Mushrooms, sliced thin
Zucchini or yellow squash, sliced thin
Fresh basil
And any other veggies you have on hand!
Preheat oven to 500 degrees F. Roll out dough and stretch to fit a 14″ pizza pan. Spread with sauce and distribute cheese and other toppings evenly, leaving about 1″ border around the whole pie. Bake for about 10-15 minutes. Remove from oven, allow to cool, and enjoy!
Happy Meatless Monday!! .
