Memorial Day Side Upgrades:
Ingredients
- 2 medium sweet potatoes or yams (cooked and cubed)
- 1/2 c. dried cranberries
- 1 small red onion
- 1/3 c. chopped almonds
- 2 Tbsp fresh parsley
Dressing:
- 4 Tbsp olive oil
- 2 Tbsp rice vinegar
- 2 tsp. dijon mustard
- Salt and pepper to taste
Directions:
Serves 6.
Cube sweet potatoes, then cook until tender. Stir in all other ingredients. Chill and serve.
