Simple, light and ready in under 5 minutes. A perfect combo for a quick meatless monday meal and a great intro into spring season veggies.
SALAD:
- 8 C organic mixed spring greens
- 1 lb fresh peas, shelled (about 1 c), or 1/4 lb snow peas, cut up, or a combination
- 5 radishes, sliced
- 1 tbsp chopped fresh mint
DRESSING:
- 1 tbsp wine vinegar (i use brag g’s apple cider vinaigrette)
- 1 tbsp chopped fresh mint
- 1/4 tsp salt
- 1/4 C + 1 Tbsp olive oil
Directions
1.Prepare dressing: Put vinegar, mint, and salt in large bowl. Slowly pour in oil while whisking.
2.Make salad: Add greens, peas, radishes, and mint to dressing, toss, and serve
