Enjoy these healthy BBQ friendly recipes this July 4th weekend.
- Kale Chips with Hummus or Bean Dip
- Corn, Cucumber, Tomato Salad
- Quinoa and Turkey Burger
- Veggie Skewers (I use peppers, cherry tomatoes, pineapples and mushrooms)
- Watermelon Punch
Kale Chips
Ingredients:
- Bunch of Kale, washed, dried completely and de-stemmed
- 1/2 TBS apple cider vinegar
- 1 TBS Extra Virgin Olive Oil
- Sea Salt, to taste
- Optional Cayenne pepper or sesame seeds for extra seasoning
Preparation :
Preheat oven to 300 degrees. After you wash, dry and break the kale into pieces (not too small), place in a large bowl. Drizzle the SMALLEST amount of the olive oil/ vinegar mix over the greens to coat them. Massage it into the leaves. This gave it an incredible flavor,but you don’t want to saturate them. I then sprinkled them with a little Himalayan Sea Salt and placed them evenly on a baking sheet lined with parchment paper.
Bake for about 18 minutes, or until the edges are crispy. Don’t over bake. Serve around the dip and watch people be so surprised with they eat kale and love it!
Corn, Cucumber and Tomato Salad
Ingredients:
- 2 or 3 ears corn
- 2 small cucumbers
- 3 tomatoes
- 1 small red onion
- 2 Tbsp. EV olive oil
- 1 Tbsp. white wine vinegar and/or lemon juice
- 1 small clove garlic, minced
- 1/2 tsp. real or kosher salt
- Basil, mint, cilantro, or parsley (optional)
Preparation:
Shuck corn and cut off kernels (can use canned) and put in a large bowl. Peel, seed, and dice cucumbers, and add to bowl. Core and dice tomatoes, add to bowl. Dice onion and add to bowl. In a small bowl, whisk together oil, vinegar &/or lemon juice, garlic, and salt. Pour over salad and toss to combine thoroughly. Mince herbs and use to garnish salad
Grilled Crunchy Quinoa Turkey Burgers
Ingredients:
- 1/2 cup quinoa, cooked
- 1 pound lean ground turkey
- 1 egg beaten
- ·Salt and pepper to taste
- 1 Tablespoon Garlic Powder
- ½ Teaspoon Crushed Red Pepper Flakes (optional)
- ½ Cup Seasoned Bread Crumbs
Preparation:
Serve on a whole grain bun or enjoy open-faced topped your favorite burger fixings.
Watermelon Punch
Ingredients:
- 2 1/2 cups watermelon chunks
- 2 tsp lime juice
- 1/3 cup lemon juice
- 2 1/2 cups seltzer, chilled
- Ice
Preparation:
In a blender, pulse the watermelon until smooth. Push it through a fine-mesh sieve. You should have at least 1 1/4 cups of juice. In a pitcher, combine 1 1/4 cups of the watermelon juice, the lime and lemon juices. Refrigerate until chilled. Add the chilled seltzer and stir gently. Serve over ice. Add vodka if desired and over 21. 🙂
